Matcha for beginners: what it is and how to love it

Matcha is powdered green tea — but that description undersells it. Instead of steeping leaves and throwing them away, you drink the whole leaf, stone-ground into a fine powder. That's why the flavour is deeper, the colour is that unmistakable green, and the energy it gives is smoother and longer than coffee's spike.

What it should taste like

Good matcha is vegetal and slightly sweet, with a gentle bitterness at the finish — think fresh grass and steamed greens, not lawn clippings. If a matcha drink tastes harsh or dusty, the powder was either low grade or whisked carelessly. Quality shows immediately in this drink; there's nowhere to hide.
